Resumen:

This chapter focuses on carotenoids and covers their definition, main biological functions and general chemical characteristics. The chapter first reviews the microorganisms that are currently used to produce carotenoids, the main biosynthetic pathways involved in their production and the regulatory mechanisms used for modulating carotenoid production. The chapter then discusses the progress made in genetic improvements for carotenoid production and the advances in fermentation conditions for producing high concentrations of carotenoids.
