Resumen:

Surfactants are widely used in manufacture to satisfy all kinds of human needs, from food, health, cosmetics, adhesives, etc. The large variety of natural surfactants made up of harmless compounds has inspired a wide variety of tailored biosurfactants using naturally occurring and fully biodegradable molecules. Their production by biological and eco-friendly processes has been the objective of numerous investigations aimed to replace chemical processes that are less amiable to the environment. Implementing highly regioselective biocatalysts allows the targeted production of the biosurfactants of interest and facilitates their purification. This chapter summarizes the characteristics and limitations of hydrolytic enzymes such as lipases, proteases, and glycosyl hydrolases, which have been explored for the synthesis of biosurfactants, and illustrates the potentially enormous diversity that has yet to be unlocked to take advantage of these biological resources. © 2023 Elsevier Inc.
