Resumen:

In 2018, the Mexican Institute of Industrial Property (IMPI) granted the Denomination of Origin (DO) to the Yahualica chili (Capsicum annuum), which is produced within the limits of a territory comprising nine municipalities from Jalisco (Los Altos Region) and two from Zacatecas. Since then, various processes of tourist and gastronomic valorization have been developed in the territory. In this chapter, we analyze these processes based on their relationship with the social sustainability of the territory and the agri-food system. We conclude that the links between territory, food, and societies are important aspects for sustainable rural development. © 2023 Elsevier Inc. All rights reserved.
