Resumen:

A collection of research articles related to the application of chitosan in fresh fruits, vegetables, and in some minimally processed products are presented in this chapter. The most relevant information is given in alphabetical order according to the common names of fruits and vegetables. The application of chitosan in each of these products and the influence of chitosan in controlling postharvest diseases and its effects on shelf life is described. Throughout this chapter different forms of chitosan application during postharvest of various horticultural commodities are mentioned. © 2016 Elsevier Inc.
